Prosciutto Wrapped Asparagus
Prosciutto Wrapped Asparagus has to be one of the easiest (yet most popular with guests) appetisers I have ever made. It takes 5 mins to prep, has only 3 ingredients and just needs to bake in the oven for 15-20mins. For canapés I estimate around 3 per person but they’re definitely popular so make sure you make some extra.They’re so easy to prepare. You start by preheating the oven to 180C (350F) and then you have to prep the asparagus. You want to get rid of the dead, woody ends that are dry with no flavour. I like to snap them off them as I find they break easily where the tough part of the spear ends. This way you don’t get the woody, stringy bit to eat, but you could always just trim them with a knife. It’s probably about half an inch or so above the cut end.
Then slice each piece of prosciutto in half lengthways and wrap along the length of the asparagus. I start on a diagonal and twist the asparagus so that the prosciutto winds itself all the way down the spear. This bit doesn’t have to be too neat as the prosciutto will shrink and crisp up as you cook it so it doesn’t matter if some are a bit loose.Lay the prosciutto wrapped asparagus spears on a baking tray and drizzle with the olive oil. Season with salt and pepper and pop the tray into the oven for 15-20mins, depending on the size of your asparagus spears.They’re done when the asparagus is tender and the prosciutto is crispy. If you aren’t certain they’re done, you could always test one to make sure! 😉 (chef’s bonus!)
These go down so well at a party or gathering (I served them as an appetiser at a BBQ and everyone loved them!) They’re salty, crispy and perfect as a canapé as they’re not too heavy and won’t fill you up. You could serve them with a dip like a salsa or a pesto or just on their own. I honestly don’t think they need anything as they’re so tasty just as they are. Best of all (apart from vegetarians and vegans obviously) they’re perfect for all allergy specific diets.
They’re SCD, Grain-Free, Gluten-Free, Dairy-Free, Sugar-Free, Paleo, Clean-Eating…the list goes on. Just make sure you buy prosciutto that’s just pork and salt – with no added sugar. Oh and make sure you make way more than you think you’ll need. They’re very moreish!!!!! Have a go and let me know what you think of them!
Prosciutto Wrapped Asparagus
Ingredients
- 30 asparagus spears
- 15 slices prosciutto
- 1 tbsp olive oil
- salt & pepper
Instructions
- Preheat the oven to 180C (350F).
- Remove the dry woody part from the asparagus by trimming about 2cm off the ends.
- Slice each piece of prosciutto in half lengthways and wrap around the length of the asparagus.
- Lay the prosciutto wrapped asparagus on a baking tray and drizzle all over with the olive oil. Season with salt and pepper.
- Roast the prosciutto wrapped asparagus in the oven for around 15-20 minutes depending on the thickness of your asparagus spears. (They're done when the asparagus is tender and the prosciutto is crispy).
- Serve warm, on their own or with a sauce to dip into.
